Cheesy Chicken Tacos

Instructions

• • Preheat oven to 180°C.
  • Heat olive oil in a large frying pan over medium heat.
  • Add onion and garlic and cook for 5 minutes, until softened.
  • Increase heat slightly and add the diced chicken.
  • Cook, stirring occasionally for 4-5 minutes, until browned.
  • Add tomatoes, chickpeas and corn kernels; stir until simmering.
  • Reduce heat slightly, stir in the cayenne pepper and sugar and cook for 5-8 minutes, until thickened.
  • Season with salt and pepper and remove from heat.
  • Heat taco shells in an oven, according to packet instructions.
  • Divide the chicken between the warmed taco shells and top with lettuce, tomato, avocado and a generous sprinkling of grated Kraft Cheddar Cheese.
